We are hiring: Food & Beverage Manager
We are looking for a commercially driven Food & Beverage Manager to lead, grow, and monetise the Food & Beverage division. This role goes beyond operational excellence. It requires an entrepreneurial leader who treats each outlet, event stream, and guest touchpoint as a profit centre, while maintaining five-star service standards.
Role purpose
The Food & Beverage Manager is fully accountable for the commercial performance, innovation, and operational delivery of all F&B activities. The role exists to grow revenue, improve margins, and future-proof the F&B offer through smart pricing, product innovation, and market-led decision making.
Key responsibilities
- Own the full P&L of the Food & Beverage Department, with clear accountability for revenue growth, margin optimisation, and cost control.
- Lead and coordinate all daily F&B operations, ensuring consistency of service, speed, and quality across outlets, events, and in-room dining.
- Actively identify, test, and implement revenue-generating initiatives such as menu engineering, dynamic pricing, upselling strategies, themed events, partnerships, and local market activation.
- Drive optimisation of food, beverage, labour, and operational costs without compromising guest experience or brand positioning.
- Develop and manage the annual budget and rolling forecasts, translating strategic goals into measurable commercial actions.
- Analyse market demand, guest behaviour, and competitor performance to inform pricing, concept refinement, and investment decisions.
- Oversee the commercial structuring and execution of events, ensuring pricing, margins, and delivery align with contractual commitments and profitability targets.
- Collaborate closely with Sales, Marketing, and Revenue teams to maximise outlet visibility, conversion, and spend per guest.
- Ensure guest feedback, complaints, and service recovery are treated as commercial intelligence, not just operational issues.
- Lead, coach, and challenge F&B leaders to think commercially, take ownership, and continuously improve performance.
- Provide clear, data-driven reporting to the General Manager and Board, focusing on results, risks, and growth opportunities rather than activity alone.
Candidate profile
- Proven experience in a senior F&B leadership role within 4 or 5-star hotels or premium hospitality environments.
- Strong commercial mindset with demonstrable success in increasing revenues, improving margins, or turning around underperforming outlets.
- Solid financial acumen, including budgeting, forecasting, menu engineering, and labour optimisation.
- Entrepreneurial thinking, with the confidence to test new ideas, challenge legacy practices, and make informed trade-offs.
- Strong leadership and people development skills, with the ability to build accountable, commercially aware teams.
- Clear understanding of current hospitality trends, guest expectations, and evolving F&B business models.
